Mandi | مندی is a Yemeni recipe which is really healthy and easy to make. In original recipe, Mutton and Chicken both are served. It is healthy because low amount of oil is used to make this also Mutton is steamed and Chicken is baked.

Each bite will give you burst of flavors and i can bet that you will not be able to define taste of this mandi in a sentence. You can surely use word delicious and tasty. It is easy to make but does takes some time to cook. So lets cook and Enjoy.

Preparation time: 20 mins.
Cooking time: 1 hour.

Ingredients of Mandi

Mutton Ingredients

Mutton Leg - 1 piece - Bakra Raan
Salt - 1 tbsp - Namak
Turmeric powder - 1 and half tbsp - Haldi
Water - 4 glass - Pani

Chicken Ingredients

Whole chicken with Skin - 2 pcs - Chamri wali murgi mukamal

Rice Ingredients

Rice - 4 glass - Chawal
Almonds - 125 gram - Badam (Boiled without skin)
Raisins - 60 grams - Mewa/Kishmish
Butter - 1 and half tsp - Makhan
Onions - 2 medium size - Payaz (Sliced)
Carrot - 1 piece - Gajar (Sliced)
Lemon - 2 pieces - Nimbu (Sliced)
Bell Pepper - 1 piece - Shimla Mirch (Sliced)
Cooking oil
Blend of Spices - 1 tsp - Garam Masala
Tikka spices - 1 tsp - Tikka Masala
Biriyani spices - 1 tsp - Biriyani Masala
Salt - 1 tbsp - Namak
Red food color - 1 pinch - Laal rang khanai wala

Tomatoes, Cucumbers and Onions were used as salad.
Fresh coriander for garnish.

Arabian Hareesa is easy to make really Healthy recipe. It is also known as Al Harees in Arabic. It has different versions in different countries. In Pakistan Lahori Hareesa is famous but we are starting our variety with original Arabian Mutton Hareesa recipe. Enjoy.

Preparation time: 10 mins
Cooking time: 60 mins

Ingredients

Whole wheat - 2 cups - Sabit gandum
Mutton meat - 1 kg - Bakra gosht
Black pepper powder - Half tea spoon- Kali mirch powder
Salt - 1 tbsp - Namak
Whole black pepper - 12 pcs - Sabit Kali mirch
Cinnamon - 2 pcs - Daar cheeni
Garlic cloves - 7 pcs - Lehsan k javai
Olive oil - As required - Zaitoon ka tael
Water - As required - Pani

Making Mutton Hareesa

First soak wheat in water over night.

Take a pressure cooker and add Mutton meat, Salt, cinnamon, garlic cloves and 1 liter water in it. Mix them well and then Steam / Pressure cook / boil for 10 minutes. The time can be different depending on quality of your meat. After that check if your meat is well cooked.

Now separate bones from the meat. After that tear out fibers (like thread) of each piece. If meat is hot you can do that with fork otherwise let it cool down and use your hand to do it.

Now user strainer to strain soup in which you boiled the meat and then put it back in pressure cooker along with whole wheat. Also add boiled meat in it along with 2 liter water and boil / pressure cook for 25 minutes. After that check if your wheat is well cooked, if it is not then pressure cook it for some more time until it is well cooked.

Now if wheat is ready then stir it until the water gets dry and ingredients mix up well. After that check the seasoning and if you need more salt add it along with black pepper powder and mix it well for 15 to 20 mins.

Now its time to blend it. If you have a Hand blender then you can use it otherwise you can blend it in blender too. Due to thickness, sometimes blender do not work properly. Here you can add 2 to 3 tbsp Olive oil to make it work.

After that dish out and enjoy. Do not forget to put olive oil on your mutton hareesa when serving. It tastes more delicious that way. Enjoy.

Mandi Chutney / Sauce is specially made for our Original Yemeni Mandi Recipe to add another flavor to it, which already has several flavors. But i also love to eat this sauce without mandi, all alone due to its Chatpata taste. Making it is really easy and quick.

Preparation and ready time: 5 to 10 mins.

Ingredients

Fresh Coriander - 1 stack / Guchi - Taza dhania
Fresh Mint - 1 stack / Guchi - Taza Podina
Tomatoes with Skin - 4 pcs - Tamatar Chilka samait
Green chilies - 3 pcs - Sabaz Mirch
Red chili powder - half tsp - Laal mirch powder
Salt - 1 tsp - Namak
Garlic - 8 cloves - Lehsan

Making Mandi chutney

Making it is really easy. You will only need blender to make it.

Add Garlic, sliced tomatoes and green chilies in it. Blend them for 1 min. Make sure you do not blend them too much or turn them in to soft paste.

After that add Coriander and Mint in it along with spices and blend again. Here too you should not blend them completely in to soft / smooth paste. Original Mandi Chutney is granular and you can see the particles in it which do not effect your bite or make you uncomfortable. Your Sauce is ready. Enjoy.

Mutabak is like an Arabian Paratha. It is delicious in taste and greens inside make it refreshing. It is also famous in Southeast asia and in Indonesia it is called Murtabak and taken as Pan Cake. It has various varieties but today i am sharing with you Original quick and easy Yemeni recipe.

Ingredients

Dough Ingredients

White flour - 2 cup - Maida
Salt - 1 tbsp - Namak
Egg - 1 piece - Anda
Olive Oil - 1 tbsp - Zaitoon ka tael
Water - As per requirement - Pani

Filling Ingredients

Beef Mince - 250 gram - Bael Gosht
Cooking oil - 3 tbsp - Tael
Spring onions - 2 pcs - Hara Payaz
Salt - 1 tbsp - Namak
Black pepper powder - 1 tea spoon - Kali mirch powder
Red chili powder - Half tea spoon - Laal mirch powder
Dry coriander powder - 1 tbsp - Khushk Dhania Powder

Al Masoob | Masoub المعصوب is an Arabic dessert and its origin is Yemen. It is blend of Wheat bread , Bananas and Honey which makes it healthy. Some people take it as break fast and i personally use it to feed Roti (Wheat bread) to my children who do not like to eat it. But this recipe has made things easier for me, Now my children love to eat it without complaining. So do try it for your kids. Enjoy.

Hummus is a 13th century recipe which is now famous Worldwide and is famous as Arabic or Lebanese Recipe but actually in the book its origin is Egypt. Its main ingredient is chickpea which is really healthy and works great as energy booster. Addition of olives and Olive oil also keeps serious illness away from you like cancer. So Enjoy the taste and stay healthy.

Chickpeas Boiled - 500 gram - Ublai Safaid Chanai
Yogurt - 250 gram - Dahi

Khubz also known as Arabic Pita bread is one of the most used Bread World wide. This same bread is used in Shawarma and actually is used with various different recipes. We use it with Falafel, Humus and other recipes. It is lite on stomach and really soft. Due to its smooth texture and lite feeling, you will consume it more than regular Wheat bread. It looks like that it is baked but it is just cooked the same way as a normal roti is cooked. We have shared its supporting recipes.

Preparation: 10 mins - an Hour at least or dough to settle.
Cooking: 3-5 mins.

Ingredients

White flour - 1 kg - Maida
Salt - Half tea spoon - Namak
Sugar - 1 tbsp- Cheeni
Yeast - 1 sachet of 11 gram /Rossmoor pack - Khameer
Cooking oil - 80 ml - Tael
Warm milk - 1 cup - Neem garam dudh
Warm water - As required - Neem garam pani

This Quantity will cook about 28 piece of breads.

Making Dough

Take a bowl with White flour in it. Add Salt, Yeast,Sugar, Oil and Milk in it. Now mix them with your hands. While Kneading the dough if you want to add water in it then only use warm water. 
Make sure the dough is not so soft neither hard. It should be as a normal dough. 

After kneading, Put oil on the surrounding of the dough and cover the bowl with a cap covered with napkin. Put it in a oven(Normal temp- No need to warm it up) and let it rest for an hour at least. You can give it rest for a longer time. 

When you will take off the Cover you will find the dough protuberated. I will knead it again and make smaller doughs out of the main dough. Remember put these doughs on a greased base otherwise they might stick to the base. 

Cooking Dough

Now take the smaller dough and cover it with dry white flour and use a rolling pin to roll it. Do not keep it too thick or thin. 

Now put it on preheated pan. After 2 to 3 mins you will see small bubbles on it. That means it is time to change its side. When it protuberate, you can cook it directly on the heat but taking it on the edge of the pan(As in Video). When it protuberate that means you have made the dough perfect. 

After cooking its both sides. Now it is time to eat it. Enjoy with Hummus, Falafel or anything you wish.
