Ingredients

Milk - 2 Liter- 
Cream - 2 Packs - 
Dried Whole Milk - 500 gram - Khoya / Mawa
Vermicelli - 1 Pack - Sawaiya
Almonds - 1 Cup - Badaam
Sugar - Half cup or as required - Cheeni
Fruit Cocktail - 1 Can
Ras Gullah - 250 Gram
Banana Jelly - 1 Pack
Strawberry Jelly - 1 Pack
Custard - 5 tbsp

How to Make

Boil the Milk and when it is boiling then stir it and add Sugar. Let the sugar melt. After that add Custard powder in cup and mix it so no solid part remains in it. 
Add Custard Milk in the main cooking pot of Boiling Milk and stir well. When another boil comes just turn off the flame and let it cool down. 

While the custard cool prepare you jelly and cut it in to small cubes. The size of the cube depends on your choice but we recommend the size we have shared in the video. 

After the Milk cools down add Boiled Colorful vermicelli in it and mix it well. Make sure the vermicelli spreads thoroughly. Now add fruit cocktail can and mix it well. 

After fruit cocktail, it is turn of Dried whole milk to go in the cooking pot. Make sure that you turn the dried whole milk in to liquid format by stirring it well. Now add Cream Packs and mix them well too. 

The recipe is in final stage, Now just add jellies and stir it with light hand so they do not break and then dish out. Add Ras Gullas in it after dishing out or you can add it while adding the jellies but for a better presentation it is good to add them at the end after dishing out.

Ingredients

Rice – As required - Chaawal

Cooking Oil – 6 tbsp – Tael

Ginger Garlic Paste – 1tsp – Lehsan adrak paste.

Tomatoes – 3 pcs – Tamatar

Potatoes – 2 pcs - Aloo

Spring onions - 1 cup – Hara Payaz

Salt – As required – Namak

Red Chili Powder – Half tsp – Laal Mirch Powder

Turmeric Powder – 1 tbsp - Haldi

Cumin Powder – Half tsp – Zeera Powder

Coriander powder – 1 tbsp – Dhania Powder

Ginger – Half inch - Adrak

Green Chili – 2pcs - Sabaz Mirch

Water – As required - Paani

  

Making Rice

Take new rice and soak them in water for 30 minutes. After that take a wide cooking pan. Add water and two table spoon salt in the cooking pan, boil it. When it is boiling hot add rice in it and cook them for 15 to 20 minutes. Make sure to stir them with spoon but only with lite hands otherwise you might end up breaking the rice.

Keep checking the rice and only strain them after they are in the middle state (Not to hard neither too soft). When the rice are ready, strain them and secure the water in another cooking pot. Add the rice back in to the Cooking pan you used to boil them. Cover the lid and put them on rest at low flame for 5 mins. After they are ready just mix them once with lite hands.

 

Making Rice Pich – Curry

Lets cook Pich (Rice Curry) now. Take a cooking pot and add cooking oil in it. After the oil becomes hot add ginger garlic paste in it and Sauté it until its color becomes lite golden. After Sautéing Ginger Garlic add Spring onions in it and mix them for 2 to 3 seconds only as you should not soften them. Now add sliced tomatoes.

Soften the tomatoes as Masala has to be prepared from them. Now add Salt, Red Chili Powder, Turmeric Powder, coriander powder and Cumin Powder in it. Now we will mash the tomatoes completely and mix these all spices together.

Once the spices turn in to paste smooth soft shape add potatoes in it and mix them well. Not it is time to add the strained water of rice that we secured while cooking the rice. Add that water and mix it. Now add sliced ginger and green chilies and mix again. Let it cook on flame for 5 minutes.

Now check if the potatoes we added are cooked. You can check with help of a fork by poking it into the potatoes to know if they have become a bit soft or not. During this the curry will also become thick and when it does add a Spoon of cooked rice in it. The addition of rice will give it a beautiful look and also enhance its taste. At last add fresh coriander and mix it and serve to your family and guests.

The Rice curry can be eaten with Roti, Rice or plain. Enjoy.

Introduction

Gajar Halwa also known as carrot halwa, is a popular recipe in the Middle East and Asia, particularly during the winter months. We have made it with Khoya. It is enjoyed by many as a sweet and delicious dessert.

Ingredients

Carrots - 5 kg - Gajarai
Desi Oil - 300 gram- Desi Ghee
Green Cardamom - 6 pcs - Sabaz Ilayachi
Milk - 1 Glass - Doodh
Dried Evaporated Milk - 500 gram - Khoya / Mawa
Sugar - 1 Glass - Cheeni
Raisin - As required - Mewa
Pistachio - As required - Pista
Almond without skin- As required - Badam chilkai k begair

Making

Add Desi Ghee in Cooking pot along with the Green Cardamoms, let desi ghee melt. After it is melted add the sliced and washed carrots in the pot. Do not use chinese carrots, We recommend you to use Desi Organic Carrots. Remember to add the carrots half by half while mixing them. Cover the lid of the pot for 5 mins to soften the carrots.

After opening the lid, mix the carrots again. Add one glass of milk. Cook the carrots until the water that was dispersed from carrots and the milk added gets dry. Now add 1 tbsp Desi Ghee along with a glass of sugar and mix them well.

Now also mix the melted sugar well and Sauté the carrots well. It took me 15 minutes to cook my carrots and the timing will depend on the quality of your carrots. After your carrots are ready mix Pistachio, Raisin and Almond in it and mix them well.

Now turn off the flame and add Khoya/Mawa in it. Mix it up with lite hands and only once.

Our Soft and delicious Gajar Halwa is ready to serve. Enjoy it with your family and friends.

Bitter Gourd - 12 pieces - Karela
Salt - For Cleaning - Namak

Filling Ingredients

Potatoes - 2 pcs - Aloo
Onions - 2 pcs - Payaz
Tomato - 1 piece - Tamatar
Green chilies - 2 pcs - Hari mirch
Pomegranate paste - 2 tbsp - Anar dana paste
Ginger Garlic paste - 1 tbsp - Lehsan Adrak ka paste
Black pepper powder - 1 pinch - Kali mirch powder
Dry coriander powder - 1 tsp - Khush dhania powder
Blend of spices - Half tsp - Garam Masala
Fenugreek Powder - 1 tsp - Kasuri Methi
Turmeric Powder - 1 tbsp - Haldi
Red Chili Powder - 1 tsp - Laal Mirch powder
Salt - 1 tbsp - Namak


Making

Cleaning of the Bitter Gourds

1. Peel off the Skin OF Bitter gourds as shown in Video.

2. Cut the gourd from Center and remove all the seeds inside it. 

3. Now put all the Gourds in a bowl and add 1 tbsp salt in them and give them rest for 30 minutes. 

4. Now Wash them with water twice and thrice while rubbing them with your hands so the salt and other remaining substances get washed off. 

5. Now squeeze each bitter gourd with your hands and remove  any remaining water in them. Place the Bitter gourd in a dry plate.

Your Bitter Gourds are ready to cook. 

Making Filling Material and Stuffing your Gourds.

1. First fry Potatoes till they become light golden.

2. Take a Fry pan and add Ginger garlic paste in it and fry it until it becomes light golden.

3. Now add chopped onions in it. Do not let Onions become light brown or golden. Only let them have a slight change in color and their rawness. 

4. Add tomatoes and green chilies in it and Saute them for 1 to 2 minutes.

5. Add all dry spices in it. 

6. Add pomegranate seeds paste in it and mix everything with help of spoon.

7. Now add fried potatoes in the pan and mix them well. Put the mixture on low flame for 5 minutes. 

Our material is ready now.  

Filling of Bitter Gourd


Now open the cut area of the gourd with help of your hand and fill the spices we prepared with a tea spoon. Close the cut with a Thread.

Cooking of Bitter Gourd

Preheat oil in frying pot and add your Bitter Gourds filled with spice in it. After you have fried them well just take them out in a plate and enjoy their unique taste.

Tahnia Sauce - 4 tbsp

Making

First burn Brinjals/Eggplant on stove. Then peel of their skin and separate inner material in a bowl. You can see this process by clicking here.

Then mash inner material with fork or masher to make it smooth. After that add Yogurt and Tahnia sauce and mix it well. Now add all other materials and mix it well. Your Mutabal is ready to serve. Enjoy.

Gets ready in 10 to 5 to 10 minutes

Ingredients

Banana - 12 pcs - Kelai
Apple - 4 pcs - Saib
Peach - 4 pcs - Aroo
Cabbage - 1 piece - Band Gobhi
Grapes - 250 grams - Angoor
Fruit Cocktail Can - 500 grams - Mix Phalo ka daba 
Milk - Half cup - Dudh
Sugar - 2 tbsp - Cheeni
Salt - Half tsp - Namak
Sesame Seeds - 1 tbsp - Till
Mayonnaise - 5 tbsp - Mayo
Raisins - 2 to 3 tbsp - Kishmish or Mewa
Almonds - 2 to 3 tbsp - Badam
Fresh Cream - 2 packs / 250 gram - Taza malayi daba
Thick Yogurt - 2 tbsp - Dahi 

Making

Slice all the fruits and add them to a large bowl. After adding fruits now add Fruit Cocktail can and mix it well. 

Preparing Cream

 Now take a small bowl and add Milk and sugar in it. Mix it well until sugar is dissolved completely. After that add yogurt and mix again. Yogurt is an optional thing, if you do not like it then you can skip it. 

After Mixing we will add Mayonnaise and Fresh Cream, Stir again and mix them well. Now add Salt and mix well. You can adjust Quantity of Salt as per your taste. I do not recommend using it much. After mixing it well our Creamy Material is ready to be used.

Mixing it all together

Now we will mix our cream material with fruits. Now take the bigger bowl of fruit and spread Half cream mixture over it.  Now mix it well. After that add remaining cream and mix well again. 

Now Garnish it with Raisins, Almonds and Sesame seeds. Our Russian Fruit Salad is Ready to be Served. Enjoy.

Rajma Chawal are one of the most famous vegetarian recipe of India and Pakistan. Making this recipe is really quick and simple. If you keep them dry then this same recipe is called Rajma Masala but we are making it with gravy for rice. Enjoy.

(Red beans need to be soaked in water over night)
Cooking time: 30 mins.

Red beans - 500 grams / Half Kg - Rajma
Garlic - 2 bulbs / Gathi - Lehsan
Ginger - 1 inch - Adrak
Onions - 2 pcs medium - Payaz
Green chilies - 2 pcs - Sabaz mirch
Black pepper - 1 tsp - Kali mirch powder
Red chili flakes - Half tsp - Laal daddar mirch
Blend of spices - Half tsp - Garam Masala
Fenugreek Powder - 1 tbsp - Kasuri Methi
Turmeric powder - 1 tbsp - Haldi
Salt - 1 tbsp - Namak
Red chili powder - 1 tsp - Red Chili powder
Cooking oil - Half cup - Tael
Water as required

Making Rajma Chawal

First Soak Red beans in water over night. Next day wash them once with clean water and put them in pressure cooker along with Tomatoes, Onions, Ginger and Garlic. Pressure cook them for 15 minutes. After 15 minutes open the pressure cooker and there will be water there just turn on the flame and dry it.

When water gets dry then add Cooking oil and all dry spices in it except fenugreek powder and Blend of spices (Garam Masala) and mix them well. Now add 1 liter water and mix after that pressure cook again for 10 minutes.  

Note: If you like to eat them dry then you can skip the water and they will be ready to serve before adding water as Rajma Masala recipe.

After pressure cook your red beans are ready to serve. Garnish them with Fresh coriander and green chili and enjoy.

Khubz also known as Arabic Pita bread is one of the most used Bread World wide. This same bread is used in Shawarma and actually is used with various different recipes. We use it with Falafel, Humus and other recipes. It is lite on stomach and really soft. Due to its smooth texture and lite feeling, you will consume it more than regular Wheat bread. It looks like that it is baked but it is just cooked the same way as a normal roti is cooked. We have shared its supporting recipes.

Preparation: 10 mins - an Hour at least or dough to settle.
Cooking: 3-5 mins.

Ingredients

White flour - 1 kg - Maida
Salt - Half tea spoon - Namak
Sugar - 1 tbsp- Cheeni
Yeast - 1 sachet of 11 gram /Rossmoor pack - Khameer
Cooking oil - 80 ml - Tael
Warm milk - 1 cup - Neem garam dudh
Warm water - As required - Neem garam pani

This Quantity will cook about 28 piece of breads.

Making Dough

Take a bowl with White flour in it. Add Salt, Yeast,Sugar, Oil and Milk in it. Now mix them with your hands. While Kneading the dough if you want to add water in it then only use warm water. 
Make sure the dough is not so soft neither hard. It should be as a normal dough. 

After kneading, Put oil on the surrounding of the dough and cover the bowl with a cap covered with napkin. Put it in a oven(Normal temp- No need to warm it up) and let it rest for an hour at least. You can give it rest for a longer time. 

When you will take off the Cover you will find the dough protuberated. I will knead it again and make smaller doughs out of the main dough. Remember put these doughs on a greased base otherwise they might stick to the base. 

Cooking Dough

Now take the smaller dough and cover it with dry white flour and use a rolling pin to roll it. Do not keep it too thick or thin. 

Now put it on preheated pan. After 2 to 3 mins you will see small bubbles on it. That means it is time to change its side. When it protuberate, you can cook it directly on the heat but taking it on the edge of the pan(As in Video). When it protuberate that means you have made the dough perfect. 

After cooking its both sides. Now it is time to eat it. Enjoy with Hummus, Falafel or anything you wish.

Fruits are Essential in aftari but due to other options they get ignored so we turn them in to Fruit Chaat and then they actually become starter after Breaking Fast. Fruits are an excellent source of essential vitamins and minerals, and they are high in fiber. Enjoy.

Preparation time : 10 mins
Get ready in 5 to 10 mins depending on the quantity.

Fruit Chaat Ingredients

Apples - Saib
Bananas - Kelai
Melon - Kharbooza
Fruit Cocktail (Canned)
Juice
Chickpea - Channa
Potatoes - Aloo
Salt - Namak
Red Chili powder - Laal mirch powder
Blend of Spices - Chaat Masala

We add a lot of fruits in it but only these were available due to lock down so add whatever you like to eat. Due to mixture of various fruits it is called Fruit Chaat and does not have an official ingredients. Quantities are as per your requirement.

Making

Simply slice fruits and mix them up and add seasoning according to your requirement.

For Second recipe we will just add, Juice, Chickpeas and Potatoes in it and it will become completely different recipe. Give it a try to understand what we mean.

Pakora is all time recipe. People love to eat Pakora's when it is raining and it is cooked in different occasions. Specially in Ramadan, they are cooked every day for Aftari. This version of our Pakora is with vegetables included which makes it healthier version. Vegetarians love it. So lets cook our Vegetable Pakora Platter.

Preparation time: 5 to 10 mins
Cooking time: 5 mins

Ingredients

Egg plant - 2 pcs - Bengan
Cauliflower - 1 piece - Phool Gobi
Potato - 4 pcs - Aloo
Gram flour - 1 cup - Basin
Salt - 1 and half tbsp - Namak
Red chili powder - 1 tbsp - Laal mich
Turmeric Powder - 1 tea spoon - Haldi
Sweet Soda - 1 pinch - Meetha Soda
Water as required

You can adjust spices as per your requirement.

Making Vegetable Pakora Platter

Preparing Coating Material

First take a bowl and add Gram flour, Salt, Red chili powder, Turmeric powder and sweet soda in it. Now mix it and while mixing add water in it. Do not add too much water that it becomes too thin because if it will become too thin then it won't be able to cover vegetables. In the video you can see my material is neither too thin neither too thick.

Preparing Vegetables and Frying

Slice Potatoes, Cauliflower and Eggplant. Add seasoning as per your choice. We added salt, red chili powder and mixed them. Then we put vegetables in our coating material and covered them completely with the liquid type material we made before.

After that we put them in preheated cooking oil in fry pot and deep fried them. When Potatoes and other vegetables will Protuberate / Bulge , Change their sides and when their color changes and they seem cooked you can dish out them.

Dahi Bhalla | Baray or lets say Varra is a famous recipe worldwide with different names. It has a magical taste as every bite brings you different amazing flavors. Its Green, Khatti Meethi chatni's aroma and taste is natural and refreshing. So not only the taste but its aroma will also surprise you. There are 2 versions in this recipe, one for kids and other for adults. Enjoy.

Preparation time: 30 mins
Assemble time: 15 to 20 mins for the following quantity.
Serves about 12 to 15 people.

Ingredients

Dahi Bhalla | Baray | Varra Ingredients

White Lentils - Half Kg | 500 gram - Daal Mash | White Urad Daal
Salt - 1 tbsp - Namak
Carom seeds - 1 pinch - Ajwain
Cumin seeds - 1 pinch - Sabit Zeera
Baking Powder - 1 tea spoon
Gram flour - As required - Basin
Oil to Fry

Mixture Ingredients

Bhalla | Bhara | Varra
Yogurt - 2 kg - Dahi
Milk - 1 cup - Dudh
Salt - 1 and half tbsp - Namak
Red Chili Powder - 1 tbsp - Laal mirch powder
Chickpeas - 1 cup - Channa
Onions Sliced - 2 med pcs - Payaz
Tomatoes sliced - 2 med pcs - Tamatar
Potatoes sliced - 1 boiled - Aloo
Green Chilies sliced - 3 pcs - Sabaz Mirch
Cumin Powder - 1 pinch - Zeera Powder
Coriander Powder - 1 pinch - Khushk dhania powder
Blend of spices - 1 pinch - Chaat Masala
Fresh Coriander to garnish

Green Chatni - Green Sauce
Meethi Chatni - Imli Alu Bukhara Chatni

Making Dahi Bhalla

Making Bhalla | Baray | Varra

First take White Urad daal and clean it and keep it soaked in water over night. Next day wash it again and use strainer to clear the water. Now take a blender and put 4 spoon of white lentils in it and blend it.

If blender does not blends then add some water. Remember only use that much water required otherwise too much water can cause problems. Less the water used, Softer your Bhalla | Baray | Varra will be.

After white lentils are blended, it will look like a smooth paste. Now add Salt, carom seeds, cumin seeds, baking powder and gram flour in it. Mix all these ingredients with help of an egg beater. After mixing its time to use your hand.

Mix the material only in one direction with your hand. Do not stir. You will have to move your hand for about 15 to 20 minutes. After that to know if your material is ready or not. Just take some mixture in your hand and turn your hand upside down. If your mixture does not falls then that means your mixture is ready.

Now lets fry our Bhallas. Preheat oil in the fry pot. Take mixture in your hand and put it in the fry pot. After 2 to 3 minutes when bhallas protuberate, change their sides. Take out your bhallas in a tray when they are ready. You can also store this Bhallas in a air tight container for a month. Just pack them and freeze them. Before using Bhallas we soak them in water.

Making Dahi Bhalla final step

Take Yogurt in a bowl and beat it with egg beater so it becomes smoother. Then add Salt, red chili powder and a cup of milk. Mix it well again.

Now take a dish in which we will setup our Dahi Bhallas. First put a layer of yogurt in the dish and then put your bhallas over it. Make sure that you squeeze out all the water first from Bhallas.

Then spread chickpea over it. After that add onions, boiled potatoes and sliced tomatoes on it. Then spread another layer of yogurt on them. Now garnish it with fresh coriander and sprinkle some spices on it. We used cumin powder, dry coriander powder and Chaat masala spices.

Now add some layers of Green Chatni - Green Sauce and Meethi Chatni - Imli Alu Bukhara Chatni on it. Your Dahi Bhallas Adult version is ready.

For Kids version. I just used Yogurt, Dahi Bhallas, Salt, some red chili and sauces only. Enjoy this recipe with your family and friends.
