Pakora is all time recipe. People love to eat Pakora's when it is raining and it is cooked in different occasions. Specially in Ramadan, they are cooked every day for Aftari. This version of our Pakora is with vegetables included which makes it healthier version. Vegetarians love it. So lets cook our Vegetable Pakora Platter.
Preparation time: 5 to 10 mins Cooking time: 5 mins
Ingredients
Egg plant - 2 pcs - Bengan Cauliflower - 1 piece - Phool Gobi Potato - 4 pcs - Aloo Gram flour - 1 cup - Basin Salt - 1 and half tbsp - Namak Red chili powder - 1 tbsp - Laal mich Turmeric Powder - 1 tea spoon - Haldi Sweet Soda - 1 pinch - Meetha Soda Water as required
You can adjust spices as per your requirement.
Making Vegetable Pakora Platter
Preparing Coating Material
First take a bowl and add Gram flour, Salt, Red chili powder, Turmeric powder and sweet soda in it. Now mix it and while mixing add water in it. Do not add too much water that it becomes too thin because if it will become too thin then it won't be able to cover vegetables. In the video you can see my material is neither too thin neither too thick.
Preparing Vegetables and Frying
Slice Potatoes, Cauliflower and Eggplant. Add seasoning as per your choice. We added salt, red chili powder and mixed them. Then we put vegetables in our coating material and covered them completely with the liquid type material we made before.
After that we put them in preheated cooking oil in fry pot and deep fried them. When Potatoes and other vegetables will Protuberate / Bulge , Change their sides and when their color changes and they seem cooked you can dish out them.
Chicken Puffs are Mouth watering, Kids Favorite recipe but an adult who will try this will become a kid for sure. Creamy filling and soft texture will not let you stop until all puffs are eaten. Enjoy.

Preparation time: 20 mins and 2 hour Wait time for dough. Cooking time: 10 mins for material + 10 to 15 mins for baking.
Ingredients
DOUGH
White flour - 4 cup - Maida Cooking Oil - 4 tbsp - Tael Salt - Half tea spoon - Namak Sugar - 1 tea spoon - Cheeni Egg - 1 piece - Anda Yeast - 1 small pack - Khameer Nido Milk Powder - 2 tbsp - Khushk Dudh
Filling Material
Chicken - 1 and half cup - Murgi White flour - 2 tbsp - Maida Butter - 2 tbsp - Makhan Salt - 1 tea spoon - Namak Black pepper powder - 1 tea spoon - Kali mirch Onion - 1 med size - Payaz Green Chilies - 5 pcs chopped - Sabaz mirch Fresh milk - 1 and half cup - Dudh
You will also need an extra egg and sesame seeds.
Making Chicken puffs
Preparing Dough
Take a bowl and strain White flour in it and add all above mentioned ingredients of dough in it and mix them well with your hands.
Now take Lukewarm water and add some in dough material and keep mixing the material until it comes in to proper dough shape. Make sure that you do not turn your dough too hard neither too soft. It should be normal soft. When you dough is ready then take some cooking oil in your hand and grease dough and bowl with it. Now cover your bowl with a napkin and lid. Give it some rest in a warm place for at least 2 hours for better results.
Preparing Filling material
Take pan and add butter in it. After it melts then add 2 tbsp white flour in it. Mix it for 2 to 3 minutes. Now add fresh milk in it and keep stirring spoon while adding milk so it does not becomes granular. After adding milk take an egg beater and mix it for 2 to 3 so if there are an remaining granular pieces remaining then they mix up well with the material. Now add Salt, black pepper and chicken in this material and mix it well. After mixing chicken add chopped onions, green chilies and fresh coriander in it. Now mix them again and let the chicken cook. Chicken will get ready in 3 to 4 minutes but you should check yours as time may differ due to quality of the chicken meat.
Final Making
Take out bowl of your dough which will look raised now. Grease your hands and a tray. Now make small doughs out of it just like you make a dough for Roti bread but smaller in size. Now Roll them with Roll pin and fill them with material we prepared above and close them.
Do give them different shapes please refer to the video as we have shared different ways to make shapes in it which can not be written here.
After closing them take an egg and beat it. Now put beaten egg over your puffs with help of a brush and sprinkle sesame seeds over the puffs.
Now bake them in preheated oven at 180 degree Celsius heat. It will take about 10 to 12 minutes to bake but you can check your puffs after 10 minutes to know if they need more heat. When they are ready just broil them to bring a beautiful color on them. Now they are ready. Enjoy these delicious Chicken puffs with your friends and family.

Ingredients for Marination
Sliced Boneless Chicken: 500 gram. Salt: 1 teaspoon. Red Chilli Powder: 1 and half teaspoon. Ginger Garlic paste: 1 teaspoon.
Ingredients for Batter
Egg | Anda:1 piece. Sweet Soda: 1 pinch. Vinegar / Sitka: 1 teaspoon. White flour | Maida: 3 tablespoon. Corn flour | Makayi ka Ata:2 tablespoon. Baking Powder:1 pinch. Cold water | Thanda Paani: To stir material. Salt and Black Pepper | Namak aur Kaali Mirch: As per your requirement.
Marinating Chicken
Poke holes in chicken with a fork for better marination.
Add Salt, Red chilli powder and ginger garlic paste. Mix them well with hands.
Now to make it tender we will hammer each piece. You can do hammering before putting the spices on the chicken. The chicken is ready now put it in refrigerator for at least 30 mins. The more you keep it before cooking is better.
Preparing Batter of Tempura
Add an egg in a bowl. Then a pinch sweet soda and pour one tea spoon vinegar over the sweet soda so it turns in to a foam kind of shape. Add a little bit Cold Water and Stir it.
Take another bowl and add White Flour, Corn Flour and Baking Powder in it. Stir them.
Now mix / stir above both materials together until it changes in to liquid form. While stirring only add cold water. After that add Salt and Black pepper for taste. Batter is ready.
Time to Fry Tempura
Take a deep frying pan and Preheat oil. Now put the chicken in Batter
material and coat it. After that just put it in the oil and fry it. It
will be ready in 3-4 minutes but if you like it more crispy just fry it a bit more. Serve and Enjoy.

Making
Making Pakora is really simple. Just mix all the above mentioned materials. While mixing add water in them to turn material in to paste. Make sure Pakora material is not to thin. Always mix pakoras with your hands as they mix well and also are soft from inside when cooked.
Preheat the oil and start putting the material in them. Pakoras will be ready in 5 minutes. If you want to make them more crispy just fry a bit more as you require.
