Mutabal is a creamy delicious Arabian recipe. Most people take it as an Arabian dip. We eat it without any supporting dish. In desi style, you can use it as Raita. It is really healthy and its effectiveness (Taseer) is hot so you can eat it in winter and give it to you children. It will keep you active in cold. The best thing is that making it is really easy.

Preparation time: 5 mins

Cooking time: 5 mins

Ingredients

Eggplant / Brinja - 4 pcs - Baingan
Yogurt - 6 tbsp - Dahi
Tahnia Sauce - 4 tbsp 
Lemon Juice - 2 tbsp - Limu ka Rass
Olive oil - 3 tbsp - Zaitoon ka tael
Garlic Paste - 1 tbsp - Lehsan paste
Salt - Half tsp - Namak
Black pepper Powder - Half tsp - Kali Mirch Powder
Fresh Coriander - As required - Dhania

Making

First burn Brinjals/Eggplant on stove. Then peel of their skin and separate inner material in a bowl. You can see this process by clicking here.

Then mash inner material with fork or masher to make it smooth. After that add Yogurt and Tahnia sauce and mix it well. Now add all other materials and mix it well. Your Mutabal is ready to serve. Enjoy.

Every one loves pizza and to make it more delicious it is better to use home made Pizza sauce rather than buying packed one from the market. It is really quick and easy to make. When you will try this sauce to make pizza at home then you surely will feel the difference in taste as it will be chemical free and fresh.

Preparation time: 5 mins.
Cooking time: 10 mins.

Ingredients

Tomatoes - 5 pcs - Tamatar
Cooking oil - 3 tbsp - Tael
Oregano - 1 tsp - Marjoram k patai
Thyme - 1 tsp - Tayamam k pata
Salt - 1 tsp - Namak
Red chili flakes - 1 tsp - Dadar Mirch
Red chili powder - 1 pinch - Laal mirch powder
Sugar - 1 tbsp - Cheeni
Garlic chopped - 1 tsp - Lehsan
Ketchup - 3 tbsp - Tamatar Chatni
Onion sliced - 1 small piece - Payaz

Making Pizza Sauce

Take a Pan and add cooking oil in it. After oil is hot add chopped garlic in it. When color of garlic changed then add chopped onions in it. Make sure you cook onions this much that its odor goes away and it becomes white. Do not turn it in to brown neither finish its crunchiness.

Now add Tomatoes in it and mix them. After that cover pan with lid for 5 minutes so tomatoes becomes soft. Now open the lid and you might see tomatoes leaving their own water. Press tomatoes to turn them softer and mix them. After tomatoes are mixed / pressed then add Salt, Chili flakes, red chili powder , oregano, thyme and mix them well again.

Now press tomatoes again to turn them in to softer paste form. After that add Sugar and tomato ketchup and mix well again. Here you can also add vinegar but we skipped it due to children. Now let your pizza sauce cool down.

When sauce comes on room temperature then put it in a blender and blend it. Your Sauce is ready to server. Enjoy.

Note that it is better to make fresh sauce when vinegar is added rather than storing it. Fresh and stored pizza sauce might taste a bit different. Fresh gives more refreshing feeling than stored one.

Afghani Chutney is a Minty Sour Green Sauce which is famous in Afghanistan. It give boost to your other recipes and a burst of flavors in your mouth on every bite.

We mostly use it with Pakoras and this makes them Chatt Patta at the same time.

Only few ingredients are used in this recipe but make sure you follow the trick i have shared otherwise the taste can turn bad. So watch my video carefully and if your making it from the text then read it carefully. Enjoy.

Mint …. 2 stacks …. Podina
Green Chillies …. 2 pcs sliced …. Sabaz Hari Mirch
Desi Garlic …. 7 cloves sliced … Desi Lahsan
Vinegar …… 250 ml …… Sirka

Making Afghani Chutney

It is really simple. Put all above mentioned ingredients in the Blender and blend them. The thing you should take care of is just blend it in intervals otherwise the Afghani Chutney / sauce can go bad by becoming foamy.
